Fat or no-fat is not that big a deal. It's the spikes in blood glucose caused by eating things like waffles, pancakes, bread, sugary treats, etc. that lead to diabetes, heart & artery damage, and even cancer. Cinnamon helps regulate blood sugar so you might consider adding that to the batter. That said, the waffles look fantastic. I'll have mine with real whipped cream.
