Prep: 15 minutes
Cook: 15 minutes
Shopping List:
  • 1 [16 ounce] package angel hair pasta
  • ¼ cup olive oil
  • ½ onion, chopped
  • 4 cloves garlic, minced
  • 1 28 0z can of crushed plum(roma) tomatoes and liquid
  • 2 tablespoons balsamic vinegar
  • 1 [10.75 ounce] can low-sodium chicken broth
  • crushed red pepper to taste
  • freshly ground black pepper to taste
  • 2 tablespoons chopped fresh basil
  • ¼ cup grated Parmesan cheese (optional)
  1. Pour olive oil in a large deep skillet over high-heat.
  2. Reduce heat to med-low and saute onions and garlic until lightly browned. 3-5 mins
  3. Raise heat to medium-high and add tomatoes, vinegar, red pepper, black pepper and chicken broth; simmer for about 8 minutes.
  4. While the sauce is cooking, bring a large pot of lightly salted water to a boil.
  5. Add pasta and cook for 2 minutes or according to directions (pasta will continue to cook when added to sauce).
  6. Stir in  basil and cooked pasta, tossing thoroughly with sauce.
  7. Let stand for about 5 more minutes and serve topped with grated cheese.
Note 1: Angel hair pasta is like spaghetti, only the rods are very thin. Healthier to use whole wheat.
Note 2: Add cooked chicken breast chunks (like purdue or from store bought rotisserie chicken) or shrimp can also be added to the sauce during step 5 for more protein and less carbs.

I think it is a delicious pasta, but I think it is the change in the recipe .....
The real pasta with tomato sauce, does not contain any ingredients that you used .. ;-)
